Blueberry Orange Muffins
**
3/4 - 1 cup dried blueberries
2 cups flour
2 teasoons baking powder
1 teaspoon salt (I used 1/2 tsp)
1 cup sugar
1/3 cup canola oil
1 cup buttermilk
2 eggs, beaten
1 teaspoon vanilla
zest of half (or so) an orange
In large bowl, place the four, baking powder, salt and sugar, and stir with a fork until combined. Put the blueberries in the dry mixture and toss to coat the blueberries. Make a well in the dry ingredients.
In large liquid measuring cup measure the oil, then the buttermilk. Add the eggs, vanilla and orange zest and mix together. Pour the wet ingredients into the well in the dry ingredients. Stir with a fork until all the dry ingredients are mixed in. Do not overmix.
Use a 1/3 cup dry measuring cup (or ice cream scoop) to fill the muffin pan.
Bake at 400 degrees, 18-20 minutes, until lightly browned.

Here is the sloppy joe recipe that we mentioned! Yum!

Super Easy Sloppy Joes
Freezing Method: Freezer Bag

Cooking Day Ingredients:

1. 2 lb ground beef
2. 1 small onion, chopped
3. 2 c ketchup
4. 2 T vinegar
5. 2 T lemon juice
6. 2 T Worcestershire sauce
7. 2 tsp. Dijon mustard
8. 2 tsp. paprika
9. 4 T light brown sugar
10. 1 clove garlic, minced

Cooking Day Instructions:
1. In skillet brown ground beef & onion.
2. Add garlic and cook a few minutes more.
3. Add all other ingredients.
4. Cool completely.
5. Freeze using freezer bag.

Serving Day Ingredients:

1. Hamburger Buns
2. Shredded Mozzarella cheese (about ½ cup)

Serving Day Instructions:
1. Defrost Sloppy Joe mixture.
2. Heat over medium heat until fully heated.
3. Spoon Sloppy Joe mixture on a bun and top meat mixture with mozzarella
cheese.
4. Serve immediately
