We both liked it, thought it was the best movie of the three. Would we let our 11 year old watch this movie? We both agreed that we would not. What's your opinion?

Creamy Pot Roast

1 boneless roast (rump, chuck, or other pot roast cut)
salt and pepper
garlic powder
4 or more medium potatoes, peeled and diced (I used only four, and didn't peel them)
16 oz. baby carrots (using a 5 lb. bag I wasn't going to actually weight them; I guesstimated)
1 large onion, cut in large pieces
2 cans cream of celery soup
1/2 c. sour cream
1/2 c. milk

Place roast in bottom of crock pot; sprinkle with salt, pepper and garlic powder. Add potatoes, carrots and onions. Pour both cans of soup over onion layer. cover and cook on LOW for 8 to 10 hours. Combine sour cream and milk; stir into the juices and continue cooking for 20 minutes, until heated through.

Letters to Juliet

We both liked it, but the drive-in and dead battery experience made us miss out on the last ten or fifteen minutes! At least it makes for a good story, right?!

Freezer Meal Recipe:

Chicken Sonora:

3 lbs. chicken breasts, baked and chunked
1 doz. flour tortillas, torn in quarters
1/2 lb. Monterey Jack cheese, shredded
1/2 lb. cheddar, shredded

Sauce:
1/2 cup taco sauce
1 can cream of mushroom soup
1 can cream of chicken soup
1 can chili without beans
1/2 c. milk
1 sm. can chopped green chili peppers
1 sm. onion, chopped


Mix all sauce ingredients together. These ingredients will give you a bit more than you need. Use your best judgment when building this casserole so that it doesn't overfill your pan. Layer in 9x12 inch ungreased pan: 1/2 the chicken, 1/2 the tortillas, 1/2 the sauce and 1/2 of each cheese. Repeat layers. Cover with plastic wrap, then foil, and label. On baking day thaw. bake at 350 for 40-60 minutes until it bubbles.


This recipe came from the Dining with Donny cookbook. It's a must have for all Donny Osmond die-hard fans, because, really, who cares what the recipes are like if there are pictures of Donny (and his family) in it! I have made quite a few recipes from this cookbook, and have received mixed reviews on them. This particular recipe was rated high with the family.

Chicken Cordon Bleu
A Freezer Meal Recipe
Cooking Day Ingredients:
1. 2 lb. boneless skinless chicken breasts.
2. 1 lb. sliced ham
3. 1 lb. sliced Swiss cheese
4. 1 cup Italian bread crumbs
5. ½ cup flour
6. 1 egg, beaten
7. Toothpicks
Cooking Day Instructions:
1. Using a mallet, flatten each breast to about ½”.
2. Divide up ham and Swiss cheese slices evenly among each piece of
chicken.
3. Layer each piece of chicken with ham and Swiss cheese.
4. Roll up the chicken and secure with toothpicks.
5. Dip each chicken piece in flour, then in egg, then in breadcrumbs.
6. Flash freeze chicken and transfer to freezer bag.
Serving Day Ingredients:
1. Cooking oil
2. ½ cup chicken broth
3. 1 cup heavy cream
4. Salt, pepper & garlic to taste
5. Butter (1 T for every piece of chicken)
Serving Day Instructions:
1. Defrost chicken.
2. In skillet heat oil. Lightly brown the chicken breasts on both sides.
3. Transfer chicken to baking dish.
4. Place 1 T of butter on each piece of chicken and cook for 30 minutes at 350
degrees or until chicken is fully cooked.
5. While chicken is cooking, combine broth and heavy cream and
seasonings.
6. Simmer the sauce on low until it is thickened.
7. Serve chicken with sauce spooned over each piece.

****Although I did make the cream sauce, it didn't thicken up so I didn't use it, and the chicken was wonderful without it. Saved on some calories that way, too.
